Danish-Japanese restaurant group Sticks'n'Sushi has opened its first Birmingham restaurant, bringing its yakitori, sushi and sashimi to Three Chamberlain Square at the Paradise development.

The opening, announced by Paradise Birmingham on Saturday, adds another national name to the city centre estate and fills the first leisure unit in one of its newest office buildings, which faces the Grade I listed Town Hall.

A Copenhagen favourite arrives

Sticks'n'Sushi was founded in Copenhagen in 1994 by brothers Jens and Kim Rahbek and Thor Andersen. It now runs more than 30 restaurants across Denmark, Germany and the UK, and Birmingham is its first site in the Midlands.

The founders say: "From the very beginning, Sticks 'n' Sushi has refused to be just another restaurant. The intention was always to be one of a kind."

The group is taking a 6,392 sq ft ground-floor unit looking out onto the new public space on Paradise Street. The restaurant is wrapped in glass on three sides and includes a private dining room for smaller gatherings, whether for work or celebrations.

What is on the menu

The restaurant is open every day from 12pm to 11pm, serving lunch, dinner and supper. Guests can order sharing plates of sushi, sashimi, salads and grilled sticks, either from the à la carte menu or as set menus, to eat in or take away.

Popular dishes include beef tataki with miso aioli, truffle ponzu and artichoke crisps, and Temaki Setto, a do-it-yourself sushi roll kit with lobster, wagyu tartare and avocado. From the grill come miso-glazed black cod, miso-cured Iberico pork and lamb with garlic butter, spring onion and soy.

The drinks list features Japanese teas, sake, cocktails and the brand's own Japanese rice lager, brewed in collaboration with the Danish brewery Mikkeller.

Paradise keeps growing

Sticks'n'Sushi becomes the seventh restaurant on the Paradise estate, joining Albert's Schloss, Cow & Sow, Dishoom, F1 Arcade, La Bellezza and Rosa's Thai.

When the deal was announced in June, Ross Fittall, regional development director at Paradise developer MEPC, said: "Sticks'n'Sushi is going to be yet another exciting new offer and the perfect addition to Birmingham's existing and sophisticated leisure offer. As the first venue to come to Three Chamberlain Square, it will be accessible to people from across the city and marks yet another major milestone for the estate."

The interior was designed by the Danish practice OEO Studio, known for its work on Noma Kyoto, and draws on Japanese architectural principles combined with Scandinavian design.

Good news for the city centre

The arrival of a well-known European restaurant group is a vote of confidence in Birmingham's food scene and in the Paradise scheme, which has transformed the area between Victoria Square, Chamberlain Square and Centenary Square over the past decade.

For diners, it means another reason to head into town as the Christmas season gets under way, with the city's Frankfurt Christmas Market opening in Victoria Square, just around the corner, later this week.

Sticks'n'Sushi Birmingham is now open and taking bookings.
